Avocado Chicken Salad

Ingredients

3 cups organic chopped chicken
2 hard-boiled organic eggs
6 to 7 green onion stems (diced)
2 whole avocados
Juice of one lime
2 tablespoons organic honey mustard
2 tablespoons organic Dijon mustard
1 teaspoon sea salt
Freshly cracked pepper
2 cups celery, chopped
1 cup red or yellow peppers, chopped
½ jalapeno, diced
½ cup cilantro, chopped
5 pieces of jarred sundried tomatoes in olive oil (sliced)

Directions

Mix all ingredients in a large mixing bowl and enjoy! This dish is best served cold.

Left over chicken or one chicken breast
Spoonful Greek yogurt
Spoonful verde salsa
Fresh lime juice
Avocado
Cilantro
Peppers
Scallions
Carrots
Arugula


 

Mason Jar Salads

Ingredients

1 cup chopped chicken breast
2 cups chopped kale
1/2 cup chopped celery
½ cup chopped cucumber
½ cup diced peppers of choice
1 cup cherry tomatoes
1/2 red onion, diced
4 tablespoons of Vinaigrette


 

Homemade Healthy Vinaigrette

Ingredients

¼ cup avocado oil
Juice of 2 lemons
½ teaspoon cayenne
1 tablespoon dried oregano
1 tablespoon organic Dijon mustard
2 tablespoons balsamic vinegar
2 tablespoons apple cider vinegar   
2 tablespoons chopped shallots  
Freshly cracked pepper

Directions

This recipe makes two jars! If you can take the dressing separate to work you can shake your salad when ready to eat. Otherwise put the dressing at the very bottom and layer half of each ingredient in a mason jar as follows: layering from crunchy to soft. Start layering with celery, peppers, tomatoes, etc. and finishing with kale. This way if dressing were to soak into celery it would still have the crunchy texture.


 

Avocado Tuna Salad

Ingredients

1 7oz can Wild Caught Tuna
3 tablespoons organic honey mustard
2 teaspoons Dijon mustard
2 tablespoons dill relish
2 tablespoons fresh cilantro, chopped
2 stalks celery, chopped
2 sprigs green onion, chopped
½ teaspoon cayenne pepper (optional)
1 avocado, diced

Directions

Mix every ingredient in a large mixing bowl. Enjoy with lettuce wraps or celery stalks. Easy and Delicious!
